INGREDIENTS:
4 cups of blackcurrants
2 tablespoons of orange juice
1 cup of sugar (I used caster)
1.25 cups of water
METHOD:
- Heat the water and sugar in a saucepan, until the mixture is boiling and the sugar has all dissolved. Allow it to bubble away for a few minutes and reduce slightly.
- Wash the blackcurrants then blend them up in a food processor. Using the back of a spoon, push the blackcurrant puree through a sieve so you're left with just the smooth pulp.
- Mix the blackcurrant puree with the orange juice and sugar syrup and pour the mixture into a lidded container.
- Freeze for 2-3 hours, then remove from the freezer and blend the mixture up in a food processor. Repeat this process 2 or 3 more times until the sorbet has set.
